Recipe: Red Velvet Cupcakes

Red Velvet Cupcake Recipe


Two and a half cups flour

1 tsp baking soda

Half tsp salt

1 cup butter

2 cups sugar

4 eggs

1 cup sour cream

Half cup milk

1 oz red food colour

2 tsp vanilla extract

For the frosting:

8 oz cream cheese

4 tbsp butter

2 tsp sour cream

2 tsp vanilla extract

16 oz caster sugar

Mix the flour, baking soda and salt. Beat the butter and sugar in a large bowl with an electric mixer on medium speed for five minutes or until light and fluffy. Beat in the eggs one at a time.
Mix in the sour cream, milk, food colour and vanilla. Gradually beat in the flour mixture on a low speed until blended. Spoon the batter into paper-lined muffin cups, filling each cup two-thirds full. Bake in a pre-heated oven at 350F for 20-25 minutes. Allow to cool for five minutes.
Remove from the pans and spread with frosting. Makes 30.
